Zucchini fritters with egg and avocado and raw greens

by | Apr 7, 2019

Ingredients

  • 2 large avocados (for topping)
  • 10 cups raw spinach, or other greens!
  • 10 eggs, cooked over hard or however you prefer! (on the side, cooked however you prefer)
  • 2 cups cooked quinoa
  • 2 tbsp coconut oil
  • ½ cup onion, diced
  • 2 garlic cloves, minced
  • 6 cups grated zucchini, as much water squeezed out as possible
  • 3 tsp. dried oregano
  • 2 tsp. dried dill
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 2 tbsp. lemon juice
  • generous pinch salt/ground pepper

Directions

1) Cook the quinoa.

2) Heat a dash of the coconut oil in a medium non-stick skillet over medium heat and add the onion. Cook until soft, about 5 minutes. Stir in the garlic, dried oregano and dill. Set aside and let cool slightly.

3) Grate the zucchini using a box grater or food processor. Place in a large bowl and squeeze out as much water as possible. The more water you can squeeze the better!!! Place the grated zucchini back in the bowl and add in the cooked quinoa, onion and herb mixture, flour, baking powder, lemon juice and a generous pinch salt/pepper.

4) Heat a bit more oil, to a skillet over medium-high heat. Grab a hunk of zucchini mixture (about 1/3 cup) and form into a patty. Place in the skillet and let cook 3-4 minutes until golden brown, flip and cook another 2-3 minutes on the either side.

5) Make in batches, the recipe should make about ten fritters!
