Sesame Almond Zucchini Fritters with Egg Whites

by | Apr 8, 2019

Ingredients

  • 3 Cups Grated zucchini, packed (about 2 large zucchinis)
  • 5 Tbsp coconut oil, 2 for the fritters/3 for pan frying!
  • 3 Tbsp Fresh Parsley, chopped fine
  • 3/4 – 1 tsp Himalayan Sea Salt, black pepper, garlic powder (season as you prefer!)
  • 1.5 Cups Almond flour
  • 2 tsp Coconut flour
  • 3 tbsp sesame seeds
  • 3 Eggs

Sides

  • 4 cups egg whites cooked with a spray of coconut oil!
  • 4 cups raw greens

Directions

1) Chop zucchini into small chunks; then using your Vitamix, food processor, or high powered blender, process until it resembles the texture of grated cheese— don’t blend into liquid!

2) Place the grated zucchini in a cheese cloth, kitchen towel, or lots of paper towels, and ring out as much moisture as you can; the more dry the better!!!

3) Add 2 tbsp coconut oil, garlic, pepper, sesame seeds, parsley, salt, almond flour and coconut flour. Stir until well mixed; add the eggs, and combine everything.

4) Heat some of the remaining oil in a large skillet. Form the mixture into small patties, about ¼ cup size or smaller, press them flat. Depending on the size of your pan you may need to make in batches. Pan-fry until the edges are golden brown and the top is slightly crispy, about 8 minutes on each side (I covered them for the second side.) You can also bake them on a baking sheet @ 400 for 30 min!
