Directions

Pollo Asado

  1. Use a meat tenderizer tool or hard object tool to pound chicken breasts flat, I used a hammer!
  2. Combine next 8 ingredients in food processor, or blender.
  3. Blend well to combine it all.
  4. Pour mixture over chicken and marinate 4 – 6 hours, tightly covered, in the fridge.
  5. Cook on a hot grill or in the oven or under the broiler until internal temp = 160F.
  6. Serve on top of a bed of your favorite leafy greens, cauliflower rice, and bell peppers.

Cauliflower Rice

  1. Rinse cauliflower under cool water and pat dry.
  2. Using a food processor or cheese grater, grate the cauliflower to a coarse texture (approximately the size of rice grains). You can also find it both fresh or frozen in most grocery stores now!
  3. Cut the bell peppers into small slices.
  4. Heat the coconut oil in a skillet over medium heat.
  5. Add in the cauliflower rice and peppers and continue to sauté for 4–5 minutes.
  6. Season with salt and pepper and serve.
