Mexican Black Bean Burgers with Eggs and Avocado
Ingredients
Burgers
- 2 cups organic black beans
- 3 green onions
- 4 tbsp almond flour
- 1/2 Tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- ½ tsp dried oregano
- 1/8 tsp cayenne pepper
- 1/2 tsp salt
- 1 lb. lean ground organic turkey
Sides
- 8 eggs or egg whites
- 1 large avocado
- 4 cups raw greens
- 2 tbsp coconut oil
Directions
1) Preheat the oven to 375 degrees. Drain and rinse the black beans. Place the black beans in a large bowl and mash them slightly with your hands or a potato masher. Slice the green onions and add them to the bowl along with the chili powder, cumin, garlic powder, cayenne pepper, and salt. Stir until the beans are evenly seasoned.
2) Add the ground turkey to the seasoned black beans. Mix well using your hands. Form 12 small patties (about 2-2.5 inches diameter, 1/2 inch thick). Grease the pan with some oil so they don’t stick.
3) Bake the patties in the preheated oven for 20 minutes, or until browned on the outside and no longer pink in the center. Alternatively, you can cook the patties in a skillet, on a grill, or using an indoor countertop grill.
4) Serve 3 patties with each serving, along with 2 eggs, ¼ avocado, and raw greens.
