Italian Chicken Tenders with Broccoli
Ingredients
- 1 lb Organic boneless chicken breast, cut into tenders (this would also be great with pork!)
- .5 cup almond flour
- 1.5 tbsp tapioca flour
- ¼ tsp paprika
- 3/4 tsp garlic powder
- 2 tbsp nutritional yeast flakes
- .5 tsp salt (or more to taste)
- 1 tsp Italian seasoning
- ¼ tsp black pepper
- 2 eggs
- 1/4 cup coconut oil or avocado oil for frying
- 8 cups broccoli florets (or cruciferous veggie of choice)
Directions
- Place almond flour, tapioca flour, yeast flakes, and all the spices in bowl.
- Scramble the eggs in a separate bowl.
- Prepare the chicken breast by cutting it into tender sized pieces.
- Depending on the size of your saute pan, heat a small portion of the coconut oil, let it get hot.
- Dip each chicken tenderloin into the egg and then coat each with the almond flour mixture.
- Place the prepared chicken into the hot oil and fry it for 3-5 minutes, until one side starts to brown. Once the first side is browned, turn the chicken and fry the other side for another 3-5 minutes, until the chicken is completely cooked through with no “pink” inside.
- Steam the broccoli to your liking. If you had “room in your macros” serve with your favorite complex carb or sauce!
