Ground Turkey-Oat Breakfast Sausage Served with Eggs and Raw Greens
Ingredients
- 1 lb. or organic ground turkey breast
- 1 cup organic, gluten free rolled oats
- 1 large apple peeled and sliced finely
- ½ cup almond flour
- 3 tbsp coconut oil
- 2 eggs
- 2 tbsp fresh rosemary diced fine
- 1 tsp cinnamon
- 1 tsp sage
- 1-2 tsp Himalayan sea salt (to taste)
- 1⁄4 tsp black pepper
- 1 tsp garlic powder
For the sides:
- 8 cups raw greens
- 4 cup organic liquid egg whites, cooked scrambled in a spray of coconut oil
Directions
1) Preheat oven to 425 F.
2) Place 3 tablespoons of coconut oil into a skillet on a medium-high heat and cook the apples and rosemary until the apples soften (7-8 minutes).
3) Remove from heat and let cool for 5 minutes.
4) Mix the ground turkey, oats, flour, egg, apples, as well as the other spices in a bowl.
5) Form into patties (1/2-inch-thick) from the meat and place on a baking tray. Use parchment paper or spray the pan with cooking spray. Bake for 20 minutes. Check with a meat thermometer that the internal temperature of a patty near the middle of the tray is 170F; or check the middle of one of them to make sure they are done.
6) Cook the egg whites ahead of time if you don’t mind cold or reheated eggs. I just cook them in a non-stick pan with a spray of coconut oil and scramble them.
7) Split into 4 equal servings.
