Ingredients

  • 400 grams cooked brown rice
  • 40 grams sesame oil
  • ½ cup scallions, thinly sliced
  • 3 tbsp rice wine vinegar (any vinegar will do)
  • 3 tbsp coconut aminos
  • 6 cups chopped spinach
  • 2 cups broccoli, chopped small
  • 8 oz chicken breast, cooked and chopped small
  • 1 cup egg whites
  • Sea Salt – to taste
  • 1 tsp black pepper

Directions

  1. In a medium saucepan, heat ¾ of the sesame oil, 30 grams. Add the broccoli, season with salt and pepper, and cook for a few minutes until it starts to soften. Add the scallions and cook on medium heat until tender, 2 to 3 minutes.
  2.  Stir in the cooked brown rice, vinegar and coconut aminos and cook until rice is heated through, about 3 minutes. Add the spinach and cook until wilted, 2 to 3 minutes longer. Toss in the cooked chicken.
  3. In the same pan, push the cooked rice mixture to the sides of the skillet and add the last 10 grams of sesame oil. Add the egg whites to the pan, stirring until cooked, 1 minute. Mix the eggs with the rice. Taste, then add more salt or pepper as desired.
  4. Split into 4 servings. If you have room in your macros, top with seeds or chopped nuts!
