Ingredients
- 1 cup organic coconut flakes (unsweetened)
- 1 cup almond flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika powder
- salt and pepper
- 5 – 6 oz Haddock filets
- 5 Tablespoons coconut oil
- 2 egg
Green Beans
- 2 lb. green beans , fresh, rinsed, ends trimmed
- Salt, pepper, chili flakes to taste
- 6 garlic cloves , minced
- ½ cup raw almonds chopped finely
Directions
1) In another shallow bowl add your almond flour, garlic powder, onion powder and paprika. Mix to combine.
2) Sprinkle salt and pepper over your filets then dip in the egg and then the flour mixture.
3) Coat both sides and place on a plate.
4) In a large skillet, add oil and heat to medium high.
5) Add your chicken, turn the heat to medium and brown both sides. Approximately 3-5 minutes per side.
6) In a large fry pan, heat ⅔ of the coconut oil, cook the minced garlic, constantly stirring, for about 30 seconds. Add chopped green beans, season to taste. Sauté on medium heat for about 5 minutes or so until they soften.
7) In a separate pan, heat the rest of the oil, add the chopped nuts, some sea salt, and fry them until brown, remove from heat.
8) Toss the nuts with the green beans, taste and add more salt, if needed. You can add chili flakes if you want more spice!
