Cashew Crusted Chicken
Ingredients
- 1 lb. skinless chicken breasts, cut into thin tenders
- 1 cup raw cashews
- 1 tsp arrowroot powder
- 2 eggs
- 1 t garlic powder
- ½ tsp chili powder
- ⅓ tsp cumin
- ½ t paprika
- ½ t dried parsley
- Salt and pepper, to taste
- ¼ cup of melted coconut or avocado oil
Sides
- 4 cups of broccoli
- 8 cups of raw greens
- 2 cups of cooked millet
Directions
1) Preheat oven to 400°F. Prepare a baking sheet with parchment paper.
2) In a food processor or blender, pulse the raw cashews until ground into a flour-like mixture. Do not over process, I like to leave it “chunky”
3) Next, set out two medium-sized bowls.
4) In one bowl, whisk together the egg with two tablespoons of water.
5) In the other bowl, add the seasonings, arrowroot, and ground cashews. Stir together.
6) Create an assembly line placing the egg wash first, seasoning bowl next, and then the baking sheet.
7) Dip a chicken breast into the egg wash, then the seasonings (coating the chicken liberally), and place on the baking sheet. Repeat for all chicken breasts. Drizzle the melted oil over the top of the chicken breast dividing equally.
8) Bake for 20 minutes.
9) Cook the millet and steam the broccoli and split everything into 4 equal servings.
