Blueberry Oatmeal Protein Cookies
Ingredients
- 1 cup Organic Rolled oats
- 2 tbsp chia seeds
- ¾ cup whole almond flour
- 1 and ½ teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup blueberries
- 2 Tablespoons melted coconut oil
- 1 banana
- 2 tbsp honey
- 1 teaspoon vanilla extract
- 2 eggs
- 2 scoops protein powder (I used Orgain vanilla bean powder)
- ¼ cup almond milk (more or less depending on how the consistency of the cookies are)
Directions
1) In a large bowl, mix all of the wet ingredients and whisk until well incorporated.
2) In a second bowl do the same with the dry.
3) Pour the liquid ingredients into the dry ingredients and stir until no pockets of dry ingredients remain.
4) When you are ready to bake the cookies, preheat the oven to 325ºF. Line 2 large baking sheets with parchment paper or a silicone baking mat. Set aside.
5) Divide the dough evenly into 12 balls of dough, bake for 14 minutes or until golden brown. The centers will look underdone. Allow to cool at least 6 minutes on the baking sheet before transferring to a wire cooling rack to cool completely. Store cookies in an airtight container at room temperature up to 5 days. Baked cookies freeze well!
