Blueberry Granola
Ingredients
- ¼ cup coconut oil melted
- 1/3 cup coconut nectar (pure maple syrup or honey is a decent substitute) ** coconut nectar is a low sugar alternative
- 1/3 cup organic almond butter (can use Peanut butter)
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- ½ teaspoon sea salt
- 1/2 cup cashews roughly chopped (can use any raw nuts you want)
- 1/2 cup pecans roughly chopped
- 2 cups organic rolled oats
- 2 tablespoons chia seeds
- 2 tablespoons flax seed
- 1 cup dried blueberries (can use any dried fruit you want)
- 1 cup unsweetened coconut flakes
Directions
1) Preheat oven to 300 degrees F and position a rack in the center of the oven.
2) In a large bowl, mix together the melted coconut oil, nectar, almond butter, cinnamon, vanilla and salt. Add the oats, chopped nuts, chia seeds, flax seed, coconut flakes and dried blueberries and mix well to completely coat.
3) Spread mixture evenly onto a large baking sheet and bake for 45 minutes, stirring every 15 minutes to avoid burning.
4) Once the granola is visibly browned and done cooking, remove from the oven and let cool completely to get crisp.
