Beyond Beef Asian Stir Fry
Ingredients
- 1 package “Beyond beef” – (ground beef)
- ¼ cup coconut aminos (or gluten free soy sauce)
- 3 Tbsp sesame oil
- 1 tbsp honey (or coconut nectar)
- Juice from ½ lime
- 1 tbsp chili paste
- 1 tbsp rice wine vinegar
- Sea salt/black pepper – to your liking
- ½ tsp red chili flakes
- 1 tbsp fresh ginger, minced
- 1 tbsp fresh turmeric, minced
- 1 tsp garlic minced
- 1 cup brussel sprouts, chopped
- 1 cup carrots, chopped
- ½ cup celery, chopped
- 1 Tsp sesame seeds
- 2 cups cooked rice
- 2 tbsp – peanuts
Directions
- In a small bowl, whisk coconut aminos sauce, 1 tbsp sesame oil, chili paste, vinegar, lime juice, and honey.
- Heat 1 tbsp oil in a large skillet over medium high heat. Add the vegetables, as well as the turmeric, garlic, and ginger. Sprinkle the sesame seeds onto the veggies. Season with salt, pepper, and chili flakes. Fry until the veggies start to brown and become soft.
- In a second skillet, heat ½ tbsp sesame oil, add the package of Beyond Meat Beef and cook until browned, I like to cook it well done and extra crispy.
- Combine the beef with the veggies. Add the cooked rice. Add the sauce and cook everything on low heat until combined. About 6-8 min.
- In a small fry pan, heat the last ½ tbsp of sesame oil. Add the raw peanuts (or any nuts you choose). Sprinkle with sea salt. Fry the nuts for a few minutes until they start to get toasty brown.
- Serve immediately with rice.
