by | Apr 8, 2019

Ingredients

  • 2 large Eggplant, (cut into 16 thick slices)
  • 4 Tbsp avocado oil
  • 8 egg whites
  • 8 whole Eggs
  • 1 tsp Black Pepper
  • 1 tsp Garlic powder
  • Loads of pink salt

Sides

  • 2 large avocados
  • 8 cups raw greens, (arugula would be tasty!)
  • 4 cups cooked quinoa (you can choose any gluten free grain)

Directions

1) Preheat grill, grill pan, or a sauté pan.

2) Rinse the eggplant, then cut into 1-inch-thick slices from end to end, each serving will be 4 thick slices of eggplant.

3) Brush eggplant slices with oil, or pour a bit of the oil into the pan to heat, sprinkle with salt.

4) Grill eggplant for approximately 3–4 minutes per side, or fry them on each side for a few minutes.

5) Cut a hole in the center of each piece of eggplant using a small circular cookie cutter, or a sharp paring knife.

6) Sauté eggplant in frying pan over medium heat,

7) Scramble the eggs with the egg whites, add garlic powder, salt, pepper, and any spices you may enjoy! Pour some into the center of eggplant slice, its ok if it overflows a bit!

8) Allow egg to cook for 3–4 minutes, then flip carefully.

9) Cook for an additional 2–3 minutes; I like them nice and crispy!

10)  Cook the quinoa to the directions on the package, serve ½ avocado, 2 cups raw greens, and 1 cup of quinoa with each serving!
